| | Meet the Bakery | | | | | We know, it seems weird to "meet" a bakery. But this bakery is different. It is not just a space with a big mixer and an oven where loaves of bread get sold. It is a place to gather, meet, have fun, and eat some great bread and other things. For the owner, Kevin, the bakery is almost like another child. Like a child, they are proud of it (most of the time), so come on in, take a look around, and make sure you get your free slice of bread! You will see that there are a few things that are interesting to see about the bakery. It is always changing - come in and take a look! | | |  | | | | | 
This is the mill. It is a Skiold 600 MM stone flour mill imported from Denmark. This is the most important piece of equipment we have because all the delicious flavor and nutrition of our bread starts here, with the mill. Unlike many other bakeries in Lincoln, we grind our premium wheat to make our own flour. Fresh flour tastes the best! It isn't easy getting one of these mills. Originally from Denmark, it was used in another Great Harvest in Albequerque for a while, and then was purchased by a bakery equipment dealer in Montana. It was brought to Lincoln in early 2008 for use at our bakery. The Skiold company does not import these mills anymore, but it is considered one of the best due to its superior flour generation with minimal heat (heat breaks down the proteins in the wheat). |  | | | | | Our Mural I love kids. Maybe that is why I even have a couple myself. I had to make the bakery fun by adding a mural showing my own kids and many others having fun and enjoying our bread. Can you find the hidden animal in the clouds? How about the catepillars in the grass? | | | | Meet Baxter, our oven. It isn't the biggest oven around, but it is pretty big. Many days we fill it up with bread and sweets. Baxter came to us from another Great Harvest bakery near Chicago. We wanted our oven out where people could see what was baking, so stop by, take a look, or ask the baker who can usually be found nearby. Baxter runs from gas and is the reason our bakery is often so warm. Baxter was made in the USA and loves living in Lincoln! |  | | | |  | This huge thing is our mixer. It looks a lot like a mixer you might find at home, just a LOT bigger! Our mixer was made by Hobart and comes to us from another Great Harvest near Chicago. The huge mixing bowls that fit on the mixer are 140 quarts and the mixer weighs 1,700 pounds! Lets just say this isn't something that gets moved around the bakery. | | | | Our Kneading Table Every loaf of bread that Great Harvest Lincoln sells is unique. Each loaf is hand shaped and kneaded to make sure it is exactly how you would like it. That happens on the table. If you are here early in the morning, you can find two or more people kneading the bread. If you are lucky, you might even see our bowl lift picking up one of our enormous bowls of dough and putting it on the table. |  | | | | Wally This is Wally. Well, actually, a painting of Wally next to the mural. It seems that our health department frowns on actual dogs being at the bakery. He is a basset hound.
